French Toast looks so sophisticated, but it is simple to put together. This is one of my favorite breakfast foods. When I was in high school it was my breakfast choice almost every day. I did not use a recipe nor did I make it fancy. All I did was whisk an egg with a little milk , dip white bread in the egg and cook in a cast iron skillet with a little butter. I drizzled with hot syrup and enjoyed with hot coffee.
Here is a recipe that I have been using for years with my classes. I prefer at home to make French toast the night before and pop it in the oven the next morning especially if we have company! It is just quicker.
Here’s what you need.

2 eggs, 1 T sugar, 1/2 t salt, 1/4 t cinnamon, 1/2 cup milk, 1/2 t vanilla, & 4-6 slices of bread
Divide butter into enough cubes for the top and bottom of each slice of bread.
Whisk together eggs, milk, cinnamon, salt, sugar and vanilla.
Pour egg mixture in a flat dish or pie plate then dip bread into the egg mixture. Make sure that you do not use fresh bread. Older bread will stay together. I used old fashioned bread so I was only able to make four good pieces of French Toast. You will want the soak up some of the egg on both sides. That will ensure that you get good results after cooking it. The toast should be the texture of a custard on the inside.

Dip the bread in the egg mixture turning to coat both sides.
I used an electric skillet heated to 325 degrees. It is easy to cook 4-6 slices at the same time.

Place a cube of butter on the skillet top with a slice of dipped bread and top with another cube of butter.
Cook on each side for about 4 minutes.
French Toast ( Taken from Pillsbury Cookbook)
- 2 eggs, slightly beaten
- 1 Tablespoon sugar
- 1/2 teaspoon cinnamon
- 1/2 cup milk
- 1/2 teaspoon vanilla
- 2 tablespoons butter
- 4-6 slices bread or 6-8 slices French Bread cut diagonally about 1-in. thick
Heat griddle to medium heat ( 325 degrees). In a shallow bowl or pie pan, combine all ingredients except margarine and bread; mix well. Dip bread in egg mixture, turning to coat both sides. Place a cube of butter in the skillet top with slice of dipped bread. Put a cube of butter on the top of each slice of bread. Cook about 4 minutes on each side or until golden brown.
Makes 4 to 6 servings. 1 slice is considered 1 serving.
